It is a satisfaction that compensates us for the effort we have been making for 12 years. First, with the goat farm to produce the raw materials we needed to make our cheeses, then with the cheese factory we have been running for 8 years.

Can you share a bit of your company’s background?
I studied Business Administration and Management in Madrid and graduated as a Property Administrator. I did not feel fulfilled, and my dream was to live in the countryside and develop projects that would make me sustainable.
What are your goals for the future of your company? How do you plan to continue pushing boundaries in food and beverage industry while staying true to your roots?
As for the goat farm, continue to maintain a good breed, well fed and in good welfare conditions. Continue improving current cheeses and developing others that I have planned in the medium term. At the same time, carry out other complementary projects that are also developed on this wonderful farm surrounded by nature.
Do you have any upcoming products or innovations that you are particularly excited about?
We are finishing a new project, a fig tree plantation, to produce fresh figs. We will plant it in March 2025.
I have already shared this project with my wife, who got married in August, and we are excited about this new dream.
What makes your product different? Why should consumers choose your brand?
We take great care of milk production, strive to always make a good product, and are faithful to maintaining formality in our commitments to our clients.
How much has technology helped you, and do your product(s) have sustainable and environmentally friendly characteristics?
Technology has led us to achieve what we have achieved. We continue investing in new technology; we hope that in February, we will be approved for a helpline to acquire a new curdling vat that will allow us to improve manufacturing processes
Does your product(s) have sustainable and environmentally friendly characteristics?
Our industry’s sustainability is based on respect for the environment. In the photos I attach, you will see the extraordinary place where we are. We do not conceive of any activity that takes place in the countryside that alters the natural beauty of that space.
To what degree has climate change affected your production and business development?
It has impacted us because it rains much less than in past times, the pastures for the livestock are scarcer, and we have to resort to a greater amount of feed, which in turn has become much more expensive. The photos and videos are on the web.
