Can you share a bit of your company’s background?

Tabladillo was founded more than 50 years ago in a small village in Segovia, with a clear idea: to bring the authentic suckling pig of our land to tables worldwide. What began as a small family business is now a benchmark company in the sector, but with the same spirit as always: love for the product, respect for tradition and a constant search for quality. We remain in the rural environment where we were born, proud of our roots and committed to our origins.

What are your goals for the future of your company? How do you plan to continue pushing boundaries in the food and beverage industry while staying true to your roots?

Our objective is clear: to continue to be ambassadors of the authentic flavour of Segovia, maintaining the essence of the traditional suckling pig but adapting to new times. We are committed to innovation in formats and processes to facilitate consumption without losing quality. Indeed, we aspire to expand, yet we remain grounded and dedicated to our craft. Overcoming limits means offering more possibilities to the consumer without giving up what makes us unique: an indigenous product of excellence, raised and prepared with care.

Do you have any upcoming products or innovations that you are particularly excited about?

Yes! One of our latest innovations is the launch of suckling pigs in tin format—a product without refrigeration that preserves all the flavour and juiciness of traditional roasts. This format represents a breakthrough in conservation and distribution, especially internationally. It is practical and gourmet, and it is ready to be enjoyed in just a few minutes. And the best thing: it still tastes like Segovia.

What makes your product different? Why should consumers choose your brand?

What makes our suckling pig unique is its origin, ageing and preparation. We work exclusively with native suckling pigs from Segovia, which were raised under strict animal welfare and quality controls. We design our roasting process to adhere to the traditional recipe, ensuring a crispy skin and tender meat, akin to a homemade product. Consumers choose Tabladillo because they know that behind it is authenticity, a guarantee, and authentic taste.

How much has technology helped you?

Technology has played a crucial role in enabling us to evolve while maintaining our essence. Thanks to it, we have been able to innovate in our cooking, preservation, and packaging processes, ensuring maximum food quality. It has also allowed us to communicate better with our customers, improve traceability, and adapt to the logistical challenges of the international market. Properly applied technology has been our ally in growing while remaining who we are.

Does your product(s) have sustainable and environmentally friendly characteristics?

Of course they do. At Tabladillo, we work with local suppliers to promote the circular economy and reduce our carbon footprint. We have renewed our processes to make them more energy efficient and are committed to responsible waste management. We are also committed to formats that extend the shelf life of the products and minimise food waste. We know that sustainability is the only way forward, and we keep this in mind.

To what degree has climate change affected your production and business development?

Climate change is a reality that affects us all, including the agri-food sector. In our case, we have noticed variations in production cycles and in the availability of raw materials. That is why we work hand in hand with our farmers and technicians to adapt, improve water management systems and reduce our environmental impacts. Our commitment to innovation and sustainability is how we respond to the climate challenge without compromising the quality that defines us.
